CODEMU: Green Coffee Profile
The CODEMU cooperative, established in 2008, is committed to producing superior quality, specialty coffee from the high-altitude hills of Burundi. The cooperative comprises 202 dedicated farming families across the hills of Musema, Shembati, Kigume, and Mugumya in the Musema commune of Kayanza Province.
This coffee delivers a complex and vibrant cup with tasting notes of Orange, Lime, Chocolate, Blackberry, and Spice.
CODEMU adheres to a meticulous processing protocol: only ripe, superior-quality cherries are selected and floated, followed by pulping, a wet fermentation of 12-18 hours, and thorough washing in grading channels for final density selection. The coffee is dried on raised beds for 2-3 weeks, initially in the shade and then in full sunlight, with constant turning to ensure uniformity. It is then rested prior to export. The final milling is performed at Ikawa Nziza, Burundi's first specialty dry mill, ensuring high-quality preservation.
